Result description
The R&D consortium, consisting of INL, Eroski and 2BNanoFood and supported by EIT Food has developed two products, ready for commercialisation:
- Product 1: An edible, odourless and colourless alginate based coating emulsion containing food grade antiviral compounds optimized for anti Covid-19 protection. The technical product performance has been extensively tested and consumer desirability was tested in customer surveys, focus groups an expert tasting panel and stakeholder interviews.
- Product 2: An edible, odourless and colourless water emulsion of sodium alginate containing a food grade antimicrobial compound optimized for extending the shelf life of pears and tomatoes.
Addressing target audiences and expressing needs

EIT Food is looking to engage with developers of antiviral coatings who are interested in absorbing the learnings and methodologies from this project or who are interested in adding new coatings to their portfolio. Additionally, we are calling for fruit and vegetable supply chain actors interested in testing and implementing the solution in collaboration with the consortium partners.
EIT Food and the consortium are looking to engage with organisations that can further develop and commercialise the product with the intent of improving the sustainability and safety of the food system

R&D, Technology and Innovation aspects
Product 1 has been fully tested and has demonstrated to increase the shelf-life of fruits. Coatings have not been validated in the supply chain, which would be the next step to before implementing the product at scale.
